Coffea is either a shrub or a small tree producing red fruits. When these are ripe, they are dried in the sun for a few weeks until the outer shell dries up, rips open and releases its seeds - coffea beans. Those can either be roasted and turned into traditional coffee or used in their raw form and then called green coffee.
As green coffee has not been exposed to high temperatures (roasting) it is rich in antioxidants. Besides many others, it contains a group of compounds called phenolic acids, which are very important for our organism. Chlorogenic acids are the most valuable ones from this group. The traditional coffee contains 3-6% of them while the green coffee 39%.
It is used in nutrition supplements in order to support metabolism, help losing weight (burning fats and reducing craving for food) as well as for detoxification of a human organism.
